Here we go...The "Party."
We decided last minute (like super last minute) to have a little get together for Colin's birthday.
Colin was excited to have a little playmate just his size.

Michael had a little playmate too, his cousin Sophia.
We had yummy pulled pork, beans, cole slaw, chips and fruit.
Colin loved it.
The ever popular Pulled Pork Sandwich.
Michael Mina's Pulled Pork Sandwich

Serves: 6-8
Prep time: 5 minutes
Seasoning time: At least 1 hour
Cooking time: 5 1/2 hours
1/4 cup dark brown sugar lightly packed
2 tbsp kosher salt
2 tbsp paprika
1 tbsp ground black pepper
1/2 tbsp ground coriander
1/2 tsp dry mustard
1/2 tsp onion powder
1 boneless pork butt, about 3 pounds (pork shoulder)
1 1/2 cups apple juice
1/2 cup water
I use a gallon sized zip lock bag and add all the dry ingredients. Put the pork shoulder in and move around to evenly season. Place in the fridge over night.
When you are ready to cook, place the pork on a cooking rack in a roasting pan. Pour the apple juice and water in the bottom of the pan ( so pork is sitting above it) and cover tightly with foil.
Cook on 300 for 5 hours. After 5 hours remove foil and cook for another 30 minutes until pork is brown on the outside and the meat is tender and falling apart.
Serve with BBQ sauce on soft buns.

We literally almost all fell asleep watching him dip his finger in the frosting over and over. It was like watching paint dry.

Would you beleive that we are planning the EXACT sane menu for Max's first birthday? Different pulled pork recipe but same plan. How funny! Looked like a fun party.
