Black Bean and Sausage Soup

OK, I have the EASIEST soup recipe ever for you.  I stole the idea from the folks at Trader Joe's but switched things up a bit.

Start off with 1 container of Trader Joe's Latin Style Black Bean Soup.

You will also need some roasted sweet corn. 

Don't freak.  It comes in a bag.

Last but not least...

Spicy Jalapeno Chicken Sausage.

Cut the sausage and brown with a bit of olive oil.

Add all of the ingredients to a soup pan plus a few pinches of Kosher Salt.

Stir and let simmer over low heat until ready to serve.  

(Everything is already cooked, so you really just need to heat it, but I let it simmer for 2 hours.)

Now this is the most important part.

Put on an apron.

Leave the dishes in the sink, so it looks like you have been slaving away.

Wash a few potatoes and throw them in the oven.

Feed the baby.

And look SUPER busy when your husband gets home.

He will really think you are something else.

Serve it up and enjoy.

I highly recommend adding some shredded cheese and green onion to your soup. 

It is delish. 

Swear.

You always find the best stuff at Trader Joe's. I get my creamer and then wander aimlessly. Take me with you next time!

So teh trip to Trader Joe's ended up being late in the day so we will have this tomorrow. We are both pretty excited to try it. I will report back tomorrow.

Forgot to tell you that this soup was a huge hit! I need to get more supplies to make another batch.
